What You’ll Need

Main Ingredients

  • 1 to 1.5 pounds fresh walleye
  • 5 cups cooked white rice
  • 1 to 2 sticks salted butter
  • Cooking oil
  • Soy sauce
  • Cabela’s Open Season Thai Chili Wing Sauce
  • 1 yellow onion, chopped
  • 3 carrots, finely grated
  • 1 crown broccoli, finely chopped
  • 1 pound fresh mushrooms, sliced
  • Salt and pepper
  • 5 eggs
  • 1 bunch green onions, chopped

Step by Step Walleye Fried Rice

Step 1: Preheat the Griddle

Preheat a greased flat top griddle to medium heat. A properly heated surface ensures even browning and prevents sticking.

Step 2: Start the Rice

Melt 2 tablespoons of butter on one side of the griddle.

Place the cooked rice directly on top and flatten it into an even layer. Let it sit long enough to begin browning. This creates texture and prevents soggy fried rice.

Step 3: Cook the Walleye

On the other side of the griddle, melt about half a stick of butter.

Lay the walleye fillets flat and season with salt and pepper. Allow the fish to cook until the edges begin to brown and the flesh turns flaky.

Flip carefully to avoid breaking the fillet.

Step 4: Cook the Vegetables

In the center of the griddle, heat cooking oil.

Add:

  • Onion
  • Broccoli
  • Carrots

Cook until softened. Stir occasionally so they do not burn.

Step 5: Brown the Rice

Once the rice develops a light crust, add a splash of soy sauce.

Continue turning and frying to distribute flavor evenly.

Step 6: Finish the Fish

The walleye is done when:

  • It flakes easily with a fork
  • The edges have a light crisp
  • The color turns opaque white throughout

Reduce heat to warm once cooked.

Step 7: Add Mushrooms and Eggs

Move cooked vegetables forward on the griddle.

Add mushrooms to the back and cook until softened.

Crack eggs in the center and scramble until fully cooked.

Step 8: Combine Everything

Chop the walleye into bite sized pieces.

Mix together:

  • Rice
  • Vegetables
  • Mushrooms
  • Eggs
  • Walleye

Continue frying until you reach your preferred crispness.

Step 9: Add the Final Flavor

Turn off the heat.

Drizzle Thai Chili Wing Sauce over the mixture and stir gently to combine.

Garnish with chopped green onions and serve hot.
